Shepherd Salad

The origin of this salad lies in the time when shepherds took care of cattle. Each village used to have one shepherd to whom everyone entrusted their livestock. In exchange for herding the cattle, the villagers gave the shepherds solid food that had a long shelf life. Think of tomatoes, cucumbers, peppers, onions and bread. On the way, the shepherds prepared their meal with these ingredients. This easy to prepare salad was often eaten by the shepherds for lunch or dinner. The ingredients of this salad therefore remain fresh and crispy for several hours.
