White bean Stove with Beef
When you visit the beautiful country of Turkey in the colder months of the year, this much-loved dish is not to be missed. Wherever you look, the steaming bowls appear on the cafes' lunch counters on every street corner. What makes this homemade dish so popular? Some say it depends on the chef in the kitchen, while others believe that the clay pot in which it is cooked influences its particular taste. The dish is traditionally eaten with rice and some pickles, but it is also delicious with freshly baked pide bread. Would you like to prepare this meal quickly? Then, Miras has the handy pre-cooked white beans in different sizes. Do you have a little more time? Then go for the dried beans. Soak them overnight in plenty of cold water and cook them well, the next day.
Time to get started
- Stew the cubes of beef with salt and pepper at least 1 hour in advance.
- When the meat is cooked, add the chopped bell pepper, the chillies and the chopped onion and fry with 20 grams of butter until the vegetables are translucent.
- Add 2 tablespoons of Miras Tomato Puree and 1 tablespoon of Paprika Puree. (add a peeled, chopped tomato for extra tomato flavor)
- Add the drained white beans along with some salt and pepper.
- Stir over medium heat until well mixed with puree and red in color.
- Add 4 glasses of water and bring to a boil over high heat.
- Turn down the heat and cook the stew for another 20 minutes until done (check that the beans are well cooked and the tomato sauce is well bound)
- Add some salt and pepper to taste and for the beautiful red color some Miras Mild Paprika powder.
- The stew is delicious with a Turkish rice pilaf, but also with freshly baked crusty bread.

- 500gr-600gr beef, cut into small cubes
- 1 large onion, finely chopped
- 3 red chillies cut into slices
- 1 red pepper cut into strips
- 2 green Charlie Biber (pepper) in pieces
- 20 g of butter
- 2 tbsp. of Miras tomato paste
- 1 tblsp. of paprika puree
- Optional: 1 large fresh tomato, peeled, diced without seeds
- Miras Black Pepper
- Miras Paprika powder
- 4 glasses of water
- 3 glass jars or tins of Miras white beans, drained and rinsed.
- Miras Tosya Rice (see Rice Pilaf recipe) or fresh crusty pide bread.
