Vegetarian Bulgur-Lentil Balls
Grandad Aslan’s favourite recipe. Savour times past and taste the tradition. You will definitely enjoy this delicious vegetarian dish!
Time to get started
- Cook 1 glass of red lentils in 2 glasses of water on high heat until the lentils have a thick consistency. The lentils should be soft, yet not dissolved.
- Remove the pan from the heat and add 1½ glass of fine (köftelik) Bulgur. Stir and mix well with a spoon and leave to rest for half an hour to fully absorb all water.
- In the meantime, sweat a large chopped onion in a little bit of (olive) oil.
- Add 1 tablespoon of tomato puree and 1 tablespoon of paprika puree and mix into an even, homogenous mass with the onions.
- After 30 minutes, when the lentil-bulgur mixture has been absorbed well and is soft enough to be kneaded, add the onion-tomato-paprika mixture.
- Add salt, black pepper, ground cumin and some pul biber for more heat. Mix all ingredients well and knead it into a dough.
- Test to see if the mixture can be rolled into little balls. If so, add the fresh parsley and spring onion at the end.
- Mix well and roll into little balls with your fist. Serve on a dish with Romaine lettuce. Enjoy!
